Doughnuts are a treat that we don’t often have in our house. A couple of years ago I would have said never, but those pesky little mini doughnuts at Starbucks have a way of making their way home with Daddy. I remember going to visit and old friend when my kids were young, and they had doughnuts and bagels laid out for the breakfast. Q was 3 at the time, and he immediately grabbed a bagel- having no idea what a doughnut was. Things have changed a little in the ensuing years, as I have gotten a bit more laxed in my puritanical nature with food. (only the smallest bit) When I saw a doughnut pan on clearance at a big box store, I bought it. Total impulse purchase, but the kids were thrilled to see it. I scoured the internet for baked doughnut recipes and Q settled on this strawberry one, which I converted to whole grain to make myself feel even better for the splurge. My next task is fining a gluten/grain free version. If you know a good one, please post it!
Preheat oven to 375º. Combine the dry ingredients in a large bowl. In a medium size bowl combine the buttermilk, oil, eggs and vanilla and mix well. Add the wet to the dry and mix until just combined. Add the vinegar and mix thoroughly. Stir in 1/2 cup strawberries.
Fill a pastry bag or a plastic pag with the corner snipped, and pipe into the prepared doughnut pan.
Bake for 12-13 minutes until golden. Cool in pan for 5 minutes, then release to cooling tray.
To make glaze, combine the powdered sugar with 1/4 cup strawberries and 1 tablespoon water. whisk until it is smooth.Spoon the glaze over the doughnuts and let the glaze set up for 5-10 minutes.

- • 1 teaspoon baking soda
- • ½ teaspoon salt
- • ¾ cup sugar
- • ¾ cup buttermilk

- • ¾ cup sunflower oil or grapeseed oil
- • 1 teaspoon vanilla extract
- • 2 eggs
- • 1 teaspoon vinegar
- • ¾ cup minced strawberries, divided
- • 1 cup powdered sugar
