Arugula Watermelon Salad

This years 4th of July salad was such a huge hit I had to turn right around and share it with you. It is absolutely my new favorite salad. Now, you know I love arugula. I eat it at least 4 times a week, and I usually pair it with savory items like nuts and blue cheese. Then I saw Ina Garten make an arugula salad and she put watermelon and feta in it. I was shocked, and also curious. So I made her salad, and it was spectacular. Feta and Watermelon were made for each other! Who knew?

Arugula and Watermelon Salad

5 ounces of Arugula 
7 ounces of cubed feta
1/4 cup mint leaves, chiffonnade 
3 cups of watermelon 1″ cubes
1/4 cup lemon juice
1/2 cup orange juice 
1 tablespoon honey
1/2 cup olive oil
salt and pepper to taste
Add both juices and honey to a cup or bowl and whisk in the olive oil until it emulsifies. Salt and pepper to taste. 
In a large bowl add the arugula, mint and watermelon. This is very forgiving. I only gave measures to show you what I used, use what you have and in ratios you like. Add the feta and then dress lightly. Serve immediately. Arugula wits quickly and can not sit dressed for long. 
My salad served 8 adults as a side. The dressing will dress at least two salads this size, and will keep in an airtight container in the refrigerator for a week.
