Bacon and Blue Cheese Salad with Roasted Shallot Vinaigrette

This is one delicious salad. Smoky bacon and blue cheese, spicy arugula, and a sweet rosted shallot vinaigrette. Yum!  Fakin Bacon, otherwise known as Organic Smokey Tempeh Strips, is our vegetarian stand in for pork bacon. My whole family loves it, even super picky Little Man. I am sure I could make my own tempeh and crumble it, but this is so much easier. I fried the bacon to crisp it, crumbled it over the salad and then scattered gorgonzola crumbles throughout. The roasted shallot vinaigrette just sends the whole thing over the top.

Bacon and Blue Cheese Salad
serves two
4 cups of arugula
4 slices of tempeh bacon, fried and crumbled
blue cheese of your choice
roasted shallot vinaigrette
1 tablespoon olive oil
2 large shallots, cut in half through the center
1/4 cup olive oil
1/3 cup champagne vinegar
2 tablespoons maple syrup
1/2 teaspoon chili powder
1/2 teaspoon salt, or to taste
Preheat the oven to 375º. 
Peel the shallots and slice them through the belly. Oil the baking sheet and roll the shallots in the oil to make sure they are coated. Roast for about 10 minutes per side, until they are browned and caramelized. If you don’t want to use the oven you can fry them on the stove. We happened to be making oven fries at the same time, so it wasn’t a big deal. 

Puree the shallots in a food processor or blender. Add the vinegar, maple syrup and spices. Then feed in the olive oil. Taste and salt more if you would like. Extra dressing will keep for a week in a covered container in the refrigerator. 
Heat a tablespoon of oil in a pan and fry the bacon until it is golden on both sides. Remove it to a paper towel and once cool crumble into the salad. 

Serve the arugula with crumbled blue cheese, we used gorgonzola as I like the flavor best, and crumbled bacon. Then dress to your liking. I actually dress this salad just a little bit heavier than most, since the dressing really adds a lot to the flavor.
