Cheddar Biscuits and Cashew Gravy

What better Sunday morning breakfast than Biscuits and Gravy? Maybe not the healthiest, but definitely the most delicious. Biscuits and Gravy is, without a doubt, my favorite breakfast. Truthfully, I don’t care for breakfast foods much. My husband and Little Man love going out for breakfast, and for me is is boring. Another bowl of plain yogurt and some coffee. It’s a shame I can’t actually order Biscuits and Gravy at most restaurants. Then I would definitely be more excited about the prospect of breakfast out.

Cheddar Biscuits
2 cups all purpose flour
2 1/2 tsp baking powder
3/4 tsp salt
6 TBS cold unsalted butter, cubed
3/4-1 cup cream or milk
3/4 cup grated cheddar cheese
2 tsp minced garlic
1/4 tsp black pepper

Preheat the oven to 400º.

In a large bowl whisk together the flour, baking powder and salt. Cut in butter with a pastry blender, or two knives. 

When the butter resembles coarse breadcrumbs, add the garlic, the pepper and the cheese. Mix well. Add the cream and mix with a wooden spoon. Start with 3/4 cup of cream/ milk and add a splash more if you need it to come together. Kneed the dough against the bowl a few times so it comes together, then turn it out onto a floured board. 
Press the dough into a disk, then roll it out as thick as you like. MIne was about 1/2″. Using a biscuit cutter, or the rim of a drinking glass, and cut out biscuits. Place them on a baking sheet. 

Bake for 20-30 minutes until they are golden. Serve immediately. We served ours with Cashew Gravy. 


Cashew Mushroom Gravy
1/4 cup cashews, pan toasted and ground to a powder
2 tbs butter
2 tbs flour
2 cups mushroom soup, (I use Imagine creamy portobello soup
1 tsp thyme
1/4 tsp sage
1/2 tsp salt
1 tsp tamari
Saute the butter and flour for a couple of minutes 

add the soup mix and whisk

add the cashew powder and seasonings

Think there is a different soup that could work? Can’t do mushrooms.

Maybe try a different cream soup? You can also just use veggie broth, cream or milk and then season it with herbs you like.
