Chickpea Salad

This Chickpea Salad is so incredibly easy to put together, and delicious beyond belief. We served this on a buffet at our holiday party and it was a huge hit. It also kept very well, and we stuffed pita with it the next day to make a delicious lunch. It has a light lemony dressing but what really shines through is the flavor of the vegetables and the gorgeous fresh taste of the herbs. 
Chickpea Salad

2 cans chickpeas/ garbanzo beans 
1 seedless cucumber, peeled, seeded and diced
1 lb tomatoes, seeded and diced 
5 scallions, chopped
1/3 cup basil
1/3 cup parsley
1/3 cup mint
1/3 cup cilantro
10 oz feta, cubed
1/2 cup lemon juice
1/2 cup olive oil
1 TBS garlic, finely minced
salt and pepper to taste
This salad was inspired by a salad Ina Garten made. 
Rinse and drain the chickpeas. Dice all your vegetables in 1″ cubes. Use the white and green parts of the scallions. Finely chop the herbs. Dice the feta but add it last so that the feta doesn’t break up.  The dressing makes twice as much as you need, but I like to have extra dressing around for salads later in the week. Dress the salad before you serve, but also know that you can leave this salad dressed on a buffet table for hours, and it still tastes great!

Oh that is what the salad was. I love it. So light and fresh and yummy.

I made this salad twice over the holidays and it was a hit both times. Completely delicious and fresh tasting and really easy to make.
