Pumpkin Chocolate Chip Muffins

Is it too late for pumpkin? I don’t think so, it is a Thanksgiving sort of food, and we are not quite into winter yet, right?  Either way, I have several cans of pumpkin in my cabinet that were begging to be used. It was also our turn to bring snack to school in celebration of Little Man’s birthday, these pumpkin muffins were the perfect choice. I just love how rich and moist these muffins are. The molasses makes them dark and luxurious, they are not too sweet, and they have whole wheat flour in them which is always a good thing.  I find these a perfect snack to have around any time of year. They taste just as good without the chocolate chips, so feel free to leave them out if you are not in a chocolate kind of mood.

Pumpkin Muffins
makes 48 mini muffins
 
1 cup all purpose flour
1 cup whole wheat pastry flour
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup pumpkin
1/2 cup milk
1/4 cup molasses
1 tsp vanilla
1 cup chocolate chips (optional)
Preheat the oven to 350º.
Grease a muffin pan, I used mini muffins for the preschool set.
Cream butter and sugar in your mixer, add eggs one at a time. Add milk, vanilla and molasses. Mix in pumpkin.
Sift all the dry ingredients together and then add them to the wet on low. Mix until just combined.  Stir in the chocolate chips, we used Sunspire grain sweetened chocolate as Little Man’s school is pretty anti sugar. Grain sweeteners digest like a whole grain and don’t shoot the blood sugar up as fast as sugar.
Bake for 12-15 minutes or until a toothpick inserted in the middle comes out clean. If you are using full size muffins bake about 20 minutes.
