Weeknights can pose a challenge for us sometimes. Mr Fabulous often works long hours, and I can feel exhausted after a day working and then wrangling the kids. Like most of you, we have days with canned soup and sandwich dinners. Even better is when I can come up with a delicious vegetable side that is ready in 15 minutes or less; which feels totally manageable even when exhausted. These green beans are tender crisp, bursting with garlic and sesame flavor and ready in no time. The crispy shallots really add a nice flavor, and you can really never add too much garlic to green beans. They are made for each other!
Sesame Garlic Green Beans
1 lb green beans
1 tablespoon oil
6 cloves garlic, sliced
1 medium size shallot, sliced
1/4 cup black sesame seeds
2 tablespoons toasted sesame oil
salt to taste
Wash and trim the ends off the beans. Boil them in salted water for 6-8 minutes depending on how soft you want them. 6 minutes will give you crunchy beans, and 8 minutes soft but not mushy. Drain and run cold water over them until they are cool.
Heat a small amount of oil (I used coconut) in a pan and saute the shallots until they are lightly browned. Add the garlic and saute for 2 minutes. Add the green beans and the sesame seeds and toss to mix.
Add the sesame oil and salt to taste.
