Sweet Potato Muffins

Little Man and I like to spend our Saturday mornings baking something yummy. Last weekend we made these muffins. It is an adaptation of my pumpkin muffins, which is what he requested. We did not have any pumpkin on hand, but I did have some sweet potato. So sweet potato muffins were born. They are incredibly easy to make, and really delicious. I added buttermilk in place of milk, since I had some on hand. It gave these muffins such an amazing texture. So light and fluffy, but with the spicy richness that molasses brings as an interesting counterpoint. The kids and I thoroughly enjoyed these, for the few days they lasted. 

Sweet Potato Muffins

 1 cup all purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon 
1/2 teaspoon nutmeg
1/2 teaspoon salt

1/2 cup butter
3/4 cup brown sugar
2 eggs

1 cup mashed sweet potato
1/2 cup buttermilk 
1/4 cup molasses
1 teaspoon vanilla extract

1/2 cup chocolate chips (optional) 


Preheat the oven to 325º. 

In a medium size bowl whisk together the flour, baking soda, baking powder, salt, cinnamon and nutmeg. In a mixer cream the butter and sugar until light and fluffy. Add the eggs one at a time. On low add the buttermilk, vanilla and then molasses. Add the sweet potato. You can use canned or home roasted and mashed. 
Slowly mix in the dry ingredients, taking care not to over-mix. If you want to add chocolate chips, stir them in with a spoon. We added half a cup. Basically as that was all that was left of the bag of chocolate chips I have been skimming off several times a day for the last couple of weeks. 
You can either grease a muffin tin, or use liners. Usually I just grease the tin with butter, but my little helpers insisted on pastel colored liners. Who was I to refuse? This recipe makes about 15 or 16 muffins, so if you don’t have two tins you will have to make a second batch. 
Bake for 20-30 minutes, until a tester comes out clean. Cool on a wire rack.
