Whole Wheat Chocolate Chip Cookies

Is there anything better than a chocolate chip cookie, warm and gooey, right out of the oven? A quick run to Target with Little Man allowed me to make a very exciting discovery. Target has the best prices on baking chocolate I have ever seen. Ever. We stocked up on Ghirardelli bars and threw a few bags of chocolate chips in, you know, since they were there. Of course the minute we walk in the door there are demands being made, clearly not using some of the chocolate the minute we walk in the door is some sort of sin. So we took out some butter to soften, then whipped up a batch of cookies.
Whole Wheat Chocolate Chip Cookies
1 1/4 cups whole wheat pastry flour
1 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar 
1 cup (2 sticks) butter, room temperature
2 teaspoons vanilla extract
2 eggs
2 cups chocolate chips
1 cup chopped pecans and/or walnuts (optional)
This recipe is a tweaked version of what is printed on the package of chocolate chips. I substituted a little more than half the flour for whole wheat. I bet I could have substituted all of it with the same great result.  I also cut the sugar by half a cup, and we never missed it. It’s almost as if the cookies are healthy now, right? 
Preheat the oven to 375º.
Cream the butter and sugar on medium speed until light and fluffy. Add the eggs one at a time. Add the vanilla extract. In a medium sized bowl mix the flours, salt and baking soda. Pour the flour mixture into the butter and sugar, on low, until just combined. 
Stir in the chocolate chips. If you are using nuts, lightly pan toast them first, then chop them to the desired consistency. Stir them into the dough with the chocolate chips. 

Drop the dough, using two tablespoons, onto an ungreased cookie sheet. Refine the shape a bit if you need to, and press gently in the center, just a tad. 

Bake at 375º for 9-13 minutes. You are looking for them to just be turning golden around the edges. Remove the cookies to a cooling rack. 

Enjoy the cookies while they are hot, with a cold glass of your favorite milk. Funny enough each member of our household prefers a different one. So we have cow, goat, hemp and coconut. If you come eat cookies with us, we’ll have you covered, no matter what you drink.
